Cheesy Sausage, Egg and Hash Brown Casserole: Holiday

For me holiday cooking is very traditional and  synonymous with comfort.

Welcoming family, friends and gathering together around the table is sorta what I live for.

It's seems to me the messier the Kitchen, especially during the Holiday, equals happiness...

Truly, truly I am not opposed to messes-at all-just call me CrAzy! 😊

So when I find a recipe that fits the bill whether in my home or online, I want to share it with everyone and anyone who drops by. 

So today I guess that is YOU!

This casserole is easily modified to appeal to the taste buds of all of your guests and can be served for breakfast or brunch very easily- you could even eliminate the sausage if vegetarian is your happy place.

Breakfast casseroles have been a tradition in my family for years and years.

I personally love them because they are a one dish wonder and while it is baking in the oven I am able to enjoy my family!

Afterall that is what the Holidays are all about.

One of the best things about this casserole are the easy ingredients and the availability to find them in any grocery store.

Eggs, Milk, Cheese, Ground Sausage, Hash Browns

Green Onion, Red and Green Pepper Sauté in skillet 

Ingredients

  • 3 Tablespoons of olive oil divided
  • 8 Ounces ground pork sausage
  • 1 Bunch green onions chipped
  • 1 Red pepper seeded and chopped
  • 1 Green pepper seeded and chopped
  • 1 1/2 teaspoon coarse salt
  • 1 Package frozen hash browns thawed
  • 1/2 teaspoon garlic powder
  • 16 ounce package sharp shredded cheese/ 8 ounces for mixing in casserole-8 ounces for top of casserole
  • 6 eggs
  • 1/2 cup milk
  • For more veggies-add mushrooms, poblano peppers or even green chilies

Sauté vegetables for 8 minutes in skillet over medium heat 

Directions

Step 1

Preheat oven to 375. Heat one tablespoon olive oil in skillet over medium heat. Add green onion, red and green peppers and 1/2 teaspoon coarse salt. Cook over medium heat stirring occasionally about 8 minutes. Remove cooked vegetables with slotted spoon to a colander.

Step 2

Over medium heat add sausage to skillet and break up with wooden spoon. Cook for about 6 minutes or until golden brown. Remove with slotted spoon to the colander with the vegetables and let drain for a few minutes.

Step 3

Heat remaining olive oil in skillet, add hash browns in an even layer. Cook undisturbed for 6 minutes or until potatoes begin to brown on the bottom. Sprinkle hash browns with a teaspoon of salt. Continue cooking stirring occasionally until potatoes are golden brown and crispy. Remove from heat and add vegetables, meat and  8 ounces of cheese. Stir until just combined.

Step 4

Whisk together eggs and milk  and remaining salt in a large bowl. Add hash browns, vegetables, meat and cheese mixtures. Stir until just combined. Pour mixture into a greased 9x13 casserole dish sprinkle a cup of cheese on top of casserole and  bake in preheated oven for 25-30 minutes. Last 10 minutes turn oven up to 425 degrees and  sprinkle breakfast casserole with remaining cheese and cook until bubbly and melted.
Let set 5-10 minutes before serving.

Follow Steps 1-3 the night before-add eggs and cheese mixture morning of and bake according to the directions!

  4. I really like the way you placed this recipe with images, ingredients and instructions. Looks tasty and how I eat these days. High Protein and tasty. We won't be in our new home for Christmas this year, but this will be one to try once we're all unpacked and settled. As always enjoyed!
