It is officially Winter, so whether you are in the Low country or in the High Country, Winter means it is soup and stew season. Goodness, gracious do I have a recipe to share with you. If you like chicken and gnocchi well then, this Creamy Chicken Gnocchi Soup is perfect for you!

Dave, Sadie and I are living up high in the foothills of Black Forest Colorado. Not just a little 5,000 feet high, we are a whopping 7,500 and that has required acclimating, especially for flat-landers like us. I have been searching for fuel food and extra healthy recipes to keep us going strong. I have always been health conscious and aware of where our food came from. However, since we moved to this altitude my body has craved extra nutrients. With our amount of activity, and with the higher altitude we need plenty of oxygen, water, sunshine and good food to fuel us.

I first shared this Olive Garden Copy Cat soup recipe on Facebook and my Instagram account and received many requests for the recipe. But first, I must give credit to where credit is due and this is to Cooking Classy, if you are looking for quality recipes this is most certainly an account to follow.

I did make several substitutions for Olive Garden Copy Cat.
However the original recipe form Cooking Classy is below.
1- Substituted boneless chicken thighs for the chicken breasts. ( I like the richer broth)
2- Substituted 1 can of chicken broth for water.
3- Substituted Heavy cream with Fat-free milk.
4- Deleted Thyme

Creamy Chicken Gnocchi Soup

Perfect Winter Soup filled with nutrition, plump gnocchi and satisfying flavor.

ingredients:

Chicken Gnocchi Soup ( Olive Garden Copy Cat)
  • *1 1/4 cups finely chopped yellow onion
  • *1 cup small diced carrot
  • *1 cup small diced celery
  • *1 Tbsp Olive Oil
  • *3 cloves garlic, minced (1 Tbsp)
  • *2 (14.5 oz) cans low-sodium chicken broth
  • *1/2 tsp dried rosemary or 1 1/2 tsp minced fresh
  • *1/2 tsp dried thyme or 1 1/2 tsp minced fresh
  • *1/8 teaspoon nutmeg
  • *Salt and freshly ground pepper
  • *1 lb boneless skinless chicken breast, pounded evenly to nearly 1/2-inch thickness, or 2 1/2 cups cooked shredded rotisserie chicken
  • *1 (16 oz) pkg potato gnocchi or homemade gnocchi (I like to use mini)
  • * 5 Tbsp butter
  • *6  Tbsp all-purpose flour
  • *2 cups milk, then more to thin as needed
  • *1/3 cup heavy cream
  • *2 cups (2 oz) packed fresh spinach, rough chopped
  • *Shredded Romano or parmesan cheese, for serving (optional)

instructions:

How to cook Creamy Chicken Gnocchi Soup

  1. Heat 1 Tbsp olive oil in a large saucepan over medium-high heat. Add onion, carrot and celery and sauté 6 minutes, add garlic sauté 1- 2 minutes longer.
  2. Pour in broth, add rosemary, thyme, nutmeg and season with salt and pepper to taste.
  3. Add in chicken breasts (if using rotisserie chicken wait to add at the end) and bring soup to a boil, reduce heat to medium-low, cover and allow to simmer until chicken is cooked through (it should register 165 in center), about 8 - 12 minutes.
  4. Meanwhile, while chicken is cooking, melt butter in medium saucepan over medium heat. Add flour, cook and stir constantly 1 minute.
  5. While whisking vigorously pour in milk then continue to whisk vigorously to smooth any lumps. Season with salt and pepper to taste.
  6. While whisking constantly, cook until mixture thickens and lightly boils. Stir in cream, remove from heat.
  7. Once chicken in soup has cooked through remove chicken from soup and allow chicken to rest 5 minutes then dice or shred into pieces. If veggies aren't nearly soft let that soup simmer a few minutes longer before adding gnocchi.
  8. Add gnocchi to broth mixture, cover and simmer for recommend time directed on package, about 5 minutes. Reduce to low heat.
  9. Stir milk mixture into broth mixture, then add in cooked chicken (shredded rotisserie or cooked chicken breasts) and spinach. Cook until spinach wilts, about 1 minute.
  10. Serve warm with Romano cheese if desird

  2. Jemma, This looks tasty and perfect for this time of year. Everything looks so festive and inviting in that high altitude lifestyle. I like how you changed out some of those ingredients and I bet you didn't even notice the difference in flavor. We went on a Christmas binge, nothing over the top but let's just say we could have skipped the cinnamon rolls and replaced them with a soup such as this. Hope you enjoyed a nice Christmas and blessings in the new year.

  3. You are so right! 'Tis the season for soup! One of my fondest childhood memories is coming home from school and seeing our kitchen windows fogged up in the cold wintry air. I knew my precious mother was inside that kitchen cooking a pot of beans that she would serve with fried potatoes and cornbread. I love winter, and now I so enjoy cooking pots of soup or beans for my own dear, little family. I hope you had a wonderful Christmas, Jemma!

  4. It looks delicious, Jemma! I could eat homemade soup every night of the year but especially during winter. The spinach in your recipe is beautiful. I only recently began adding fresh spinach to soups and really love it. That gingerbread boy and girl pot holder is darling! I bet you have had to adjust baking recipes since living in Colorado. Our daughter and son-in-law moved to Montana last year and live in Big Sky country and it does make a difference. She says the cold and snow there is so much more comfortable than what we get here in TN, that it is a dry cold. They love it there and it sounds as if you love your new area too. Happy New Year, Jemma!

  5. This soup looks sooooo good, Jemma. I also love soups in these cold Winter months, and a favorite of mine is cheddar broccoli. I didn't realize you were that high of an altitude. My best friend lived in Castle Rock, and you may be familiar with it. Those sweet little birds on the cake you made are cute as ever.
