Give Me Some Love-Valentine Cake

Just imagine heart shaped cakes filled with sweet strawberry filling, topped with butter cream frosting and fresh strawberries! 


Our Valentine Dessert Party is just around the corner and I am busy baking up a storm.  After looking through my recipes, I have chosen White Cake with Strawberry Filling. I could have made the cake from scratch, but honestly, I got into decorating instead!


Give Me Some Love -Valentine Cake -350 degree oven


Ingredients:

1. One white cake mix (your choice)follow directions on
package and make the following adaptions.
2. Substitute 1 cup milk for 1 cup water-makes for a richer cake.
3. Add 1 tsp. vanilla.
4. Beat egg whites until fluffy-then add the cake mix.
5. Follow directions on cake mix package, from this point forward.

I am using these adorable spring form heart pans- spring form pans come in all shapes and sizes and are typically used for a cheesecake.  There is spring lock on the sides of the cake pan that releases the sides.  They are sprayed with Pam and dusted with flour.




Doesn't this batter look wonderful, very creamy, and thick .  These are going to be delicious.  I am going to pop them in the oven, not sure how long to bake them because of the size of these heart pans, so I'll be checking on them.






Baking time was about 22 minutes and they came out perfect.  I let them cool in the pans for about 10 minutes.  Now they are resting on my cooling rack.  

Give Me Some Love- Strawberry Filling

Ingredients:
1. 2/3 cup granulated sugar
2. 2/3 cup whipping cream
3. 1 packet unflavored gelatin
4. 2 tablespoon cold water
5. 3 tablespoon boiling water
5. 2 cups rinsed, hulled and crushed strawberries

Directions:

After strawberries are hulled and rinsed place in a medium size bowl add sugar and mash.  I use my potato masher.  
Soften packet of gelatin in cold water, after it is softened, add boiling water, stir until it is completely dissolved (about 30 seconds.)  Add dissolved gelatin to strawberry mixture-cool.  
Once the strawberry mixture has reached a syrup consistency, (about 45 minutes or longer.) use your Kitchen Aid or hand held mixer and beat whip cream until stiff.  Fold whip cream into strawberry  mixture and refrigerate until well set. 

Slice heart cakes into 4 sections and fill.  If you made a layer cake no need to slice them.  Filling is very easy to work with so fill each layer with the desired amount. I frosted my cakes with simple butter cream frosting, you could also use whip cream if you were going to serve and eat them immediately.






 These cakes are deceiving as they appear to be heavy-but they aren't-they are light as a cloud and oh so good!

These Valentine cakes are a cross between strawberry shortcake and a strawberry Napoleon. The strawberry filling is a great addition to any bakers recipe collection. 

Since I had extra filling and cupcakes I filled the cupcakes too!

    What scrumptious little cakes..Just perfect for a special occasion. I still have time to whip up something sweet and your heart shaped cakes are wonderful.My husband and I haven't been able to celebrate Valentine's Day due to work schedules. Tomorrow, we are going on our official date.
