Marjorie's Apple Cake

Every Fall I faithfully sit at my white kitchen table, and slowly turn the pages of my treasured cookbooks. 
I savor these moments...
I am anxiously anticipating the Holidays ahead, and all of the wonderful baking that I will do.
I love to bake, I also love to remind myself of the stories that my treasured cookbooks will tell me about my Mother's life, Mama Chris's life and Aunt Madge's life-
without even saying a single word.
Cookbook pages that are earmarked, maybe a spot of frosting still rests beside a favorite recipe.
Even, a little handwritten note with remarks about the recipe and how adjustments were made to make the recipe their very own.

The recipe that I am sharing today is exactly one of those recipes, that was tweaked, perfected, and presented by Marjorie (my mom) to her family.

It was a sensible cake that pleased us all, Dad loved a good apple cake, with a handful of raisins thrown in. 
I love Penuche Frosting, so this cake fit the bill perfectly.
Apple cakes are sort of a no-nonsense cake, except when you dress them up, like I did this one.

I have been participating in a Blogher challenge on Instagram for several weeks now, it is being hosted by Melissa and is called #BlogHerFood15.
The challenge this week is #Ibakedit.
So, in my kitchen I chopped apples, walnuts and sifted flour and beat eggs to bake this
Apple Cake, and then I dressed the cake up in celebration of Fall and life.

Sarah Michelle Gellar will be the closing keynote speaker at the BlogHerFood15 conference in Chicago this Fall.
Unfortunately I won't be able to attend this conference because of the new house construction, but I am keeping my fingers crossed for next year.

Baking is therapeutic for me as well, it helps me to push through things when they seem to get stuck in my heart or thoughts.

Also choosing recipes from the lovely ladies who have touched my life and loved me, soothes me and makes my spirit feel lighter and my heart more grateful.

So, if you choose to give this cake a try, make it your own and pass the love on to those who mean the most to you.

In the original Post 1 cup of cooking oil was left out-please make a note of this if you printed this recipe out prior to 10-18-2015.

Marjorie's Apple Cake
  • 3 eggs
  • 2 cups granulated sugar
  • 2 tablespoons good vanilla
  • 2 3/4 plain flour
  • 1 teaspoon baking powder
  • 1 cup cooking oil
  • 1 teaspoon salt
  • 2 tablespoons cinnamon
  • 4 medium size granny smith apples, peeled, cored and chopped
  • 1 cup chopped walnuts
  • 2 tablespoons apple juice
Penuche Frosting
  • 1 cup butter
  • 1 cup packed brown sugar
  • 2 cups sifted powdered sugar
  • 1/4 cup cream


Marjorie's Apple Cake Directions
  • Beat eggs in a electric mixer until thick, about 7-8 minutes or until a pale yellow.
  • Add one cup of a sugar at a time, beating until well blended.
  • Add cooking oil and vanilla. Beat well.
  • Sift flour, baking powder, salt, and cinnamon in a separate bowl.
  • Add dry ingredients slowly beating well after each addition, and scraping sides of bowl.
  • Add apple juice, chopped apples and walnuts, blend well.
  • Pour batter into a 10 inch bundt pan that has been sprayed well with Baker's Joy.
  • Bake in a 350 degree oven for 45-50 minutes.
  • Check to see if it is done by inserting a toothpick in center.
  • Cool 5 minutes in pan, then invert on cooling rack and cool completely before frosting.
Penuche Frosting
  • In a heavy 2 quart saucepan over low heat melt butter, add brown sugar and turn heat up to medium, stirring constantly for 2 minutes.
  • The frosting will be bubbly, slowly add cream to mixture and continue to stir ingredients together for 1 more minute.
Decorate
  • Decorate with edible decor glitter, add a daisy, mum or flower of choice.
  • Remove from heat and let cool, add powdered sugar, if frosting is too thick add more cream until desired consistency.

If you choose to use the edible decor glitter, please know it has a crunch to it.

This cake is a breeze to make, it will not fail it you, just inspire you and oh, I have 
been on the Apple Cake diet all week and haven't gained a pound yet...wink...

  2. Good morning sweet baker! I loved this photo when I first saw it on IG and I am loving it even more now with the instructions, the memories, the previous photos of the steps to make it. My husband and I have recently (over the past month) been glued to our TV and computer source (Netflix, I think) in order to watch back episodes of The Great British Bake-Off show....oh dear, have you seen it? If not, you must. I have a desire to bake again, thanks to them! The cakes are outlandishly beautiful, and at this very moment, I want to bake an EARL GREY cake with buttercream frosting! However, I may have to settle for something on the easier side.....an apple cake will do! I do wish I still had my mom's old Betty Crocker recipe collection in a white plastic box, something she saved for in the mid 1960s. Talk about memories.....

    Thank you! I've been waiting for this since I saw the photo first on FB and then instagram! It sounds so good--especially the combination of apple cake and penuche! I love how you decorated it too. Such a pretty presentation! Especially sweet is the fact that the recipe has already been perfected. I too love to bake family favorite recpes.

      With the holidays just around the corner, we can all use a basic recipe, I venture to say that with the basics of this batter, you could safely add other ingredients and be equally satisfied.

  11. Oh my goodness the cake looks delicious. I too love looking through my mom and grandma's cookbooks they tell such great stories. We had a house fire almost 3 years ago. I was surprised when going through the garage that I found some of the old church cookbooks my grandma had given me. I wrapped them in a Wal-Mart bag and put them in a rubber tote for storage when I moved in and couldn't find them. It took a fire and a melted tote. I cried when I saw them.

  12. I know your mind must be flooded with memories when you pull out your Mom's cookbook. What a treasure that you have it and enjoy using the same recipes she once served you and her family. This cake looks and sounds delicious and I think I am going to have to give it a try even though I don't bake much.....

  20. Jemma, this is a beautiful cake and your writing about your memories that come when you turn through your cookbooks is lovely. There is something about autumn that makes us want to bake, isn't there? I have a notebook dedicated to Fall cooking where I've stuck things over the years that seem particularly suited to fall but I was surprised to notice this year that 99% of the recipes are for desserts! Wouldn't you know!

  23. There's nothing says "autumn" more than a delicious apple cake! Thank you for sharing such a treasured recipe Jemma, I'm sure your mom would be honoured that you passed it along to your friends. I get the same cozy feeling when I'm using one of my own mom's recipes. Now that I also have her baking bowls, I often say in my head "well Mom, let's bake!", and I feel like she's right there by my side enjoying the process once again. I will definitely keep a copy of this cake recipe to share with my family too.

I still check on the old address frequently though. The books you were asking about are Harvard Classics. Actually those books we have belonged to my husband's grandmother and we were fortunate enough to receive them. I would say go with what appeals to you and your husband. I have quite a mixture of books and for the most part they were not bought for visual appeal. I do have a few that were bought from the local library and are very old. I did buy them for the visual appeal and history of the books. But you can buy them for almost nothing from a library when they are selling off the old ones. That being said I think books on a shelf are a highly decorative sight to behold! The different colors and the endless reading options warm a room up. I hope that helps!

  29. Jemma, the cake is in the oven, however I would like to point out that in the list of ingredients you listed baking powder, and in directions you listed as baking soda. For new cooks this could be confusing is the only reason I pointed it out and I am looking forward to the cake, my house smells wonderful.
