Homemade Dreamy Key Lime Pie

June 05, 2015
Key Lime Pie is one of our all time favorite desserts.
So today I am sharing my Dreamy Key Lime Pie recipe with you.
This is a wonderful dessert for just about any season.
Not key lime season, no worries we can purchase key lime juice in a bottle.

I  have recently developed the mindset that I am on vacation in the tropics ( the apartment complex

does have a very refreshing pool) and what better dessert for a tropical vacation than Key Lime pie!

Do you remember those Melamine plates from days gone by?

Well, they are back and I pretty much think better than ever.

If this pattern isn't your cup of tea, no worries here-

I love the Pioneer Woman! Truth be told she is one of my role models!

Just look at  her melamine plate collection!

Pier One, Target, Walmart, all of these stores have lovely and colorful patterns or solids.

I am envisioning how perfect they would be for a backyard party this Summer.

Fresh Key Lime Juice

This recipe all begins with these little luscious beauties-Key Limes, fresh, ripe Key Limes.

Squeeze the juice out of these little darlings to make a refreshing, rich, creamy, dreamy Key Lime Pie.

So, here is the pie, and the recipe.

Yes, I did squeeze enough juice out of these limes to equal 2/3 of a cup of lime juice.

Call me crazy or just say I am a gal on vacation...wink...

Ingredients For Key Lime Filling

  • 4 egg yolks room temperature

  • 1 can condensed milk (not evaporated)

  • 2/3 cup fresh key lime juice

  • 1/2 tsp key lime zest (grated finely)

Ingredients For Graham Cracker Crust

  • 1 sleeve of graham crackers-crushed
  • 5 tablespoons melted butter
  • 2 tablespoons granulated sugar

  • Fresh Whip Cream
  • Garnish with Raspberries or Lime Rind

Directions For Graham Cracker Crust-Oven Temp-350 degrees

  • 1 Graham cracker sleeve-crushed
  •  (I use a gallon baggie, put crackers in bag seal, using a rolling pin crush them until fine.
  •   Or use a food processor)
  • 5 tablespoons melted butter
  • 2 tablespoons sugar
  • In a small bowl combine all ingredients and press into a 8 inch pie plate
  • Bake in a 350 degree oven for 10 minutes, remove and cool completely

Directions For Key Lime Filling

  • Separate the egg yolks from the whites (save the whites for a healthy omelet).

  • Add condensed milk , fresh key lime juice and lime zest, whisk together until mixture thickens.

  • Pour filling into baked and cooled graham cracker crust.

  • Bake in a 350 degree oven for 15 minutes.

  • Remove from oven and cool completely - refrigerator for 8 hours or overnight before serving.

  • Recipe adapted from Epicurious

  18. The pie looks mouthwatering!! Beautiful bowl of key limes, and I really like the new melamime plate! We have the original solid colours for camping (my parents' old set actually), in the colours of aqua, brown, pink & yellow. I quite like using them for their nostalgic memories. Don't get too used to being on 'vacation' ... you won't want to move back into a house ;)
