Christmas Sugar Cookies

Honestly, who doesn't LOVE a good cookie-this Sugar Cookie Recipe is a keeper-buttery rich, light, fluffy and totally irresistible-even the Keebler Elves would want one of these!

This recipe utilizes cream of tartar which is a stabilizing agent- that adds thickness and prevents ingredients from losing their shape, such a wonderful ingredient for sugar cookies.

Mary's Sugar Cookies ( From Betty Crocker's Cookie Book)

Chill: 2 hr * Bake: 7 to 8 min per Sheet *Preheat oven: to 350
1 1/2 cups powdered sugar
1 cup butter or margarine softened
1 teaspoon vanilla
1/2 teaspoon almond extract
1 egg
2 1/2 cups all-purpose flour sifted
1 teaspoon baking soda
1 teaspoon cream of tartar
Granulated sugar

Beat powdered sugar and butter in large bowl with electric mixer on medium speed.  Stir in vanilla, almond extract and egg.  Stir in flour, baking soda and cream of tartar.
Cover and refrigerate about 2 hours or until firm. (Dough may be refrigerated up to 4 days(and can be frozen, too)

Heat oven to 350 degrees.  Roll half of dough at a time 1/8 inch thick on lightly floured cloth-surface or, lightly floured parchment paper.  Cut into desired shapes.  Place about 2 inches apart on ungreased cookie sheet.  Sprinkle with granulated sugar.  Bake 7 to 8 minutes or until light brown.  Remove from cookie sheet to wire rack.

Cookie Tip: A partly empty cookie sheet will produce unevenly baked cookies.  If there isn't enough dough to fill a cookie sheet, use an upside-down cake pan.

I prefer to roll my sugar cookie dough on parchment paper which has been lightly dusted with flour.  Dough does not stick and it keeps clean up simple!

I just love the way these cookies look and taste without frosting.  My next post will show you how beautiful they look decorated! ( Little hands helped me out)

White Frosting:

1 1/2 cup cups sifted powdered sugar
3 tablespoon butter or margarine, softened
1/2 teaspoon vanilla
2 to 3 tablespoons half and half

Mix all ingredients until smooth and spreadable.
Enjoy these sweet, crisp sugar cookies with all the loved ones in your life!
