Waldorf Salad Mountain Style

Peaches are one of my very favorite Summertime fruits and I am always searching for ways to
incorporate them into a healthy and tasty dish.
I truly believe you would enjoy this version of the all time classic Waldorf Salad.
In This Waldorf Salad recipe I used Palisade Peaches, which come from the High Country in
the Colorado mountains. I really think these are the most succulent peaches I have ever tasted.
They were firm, yet ripe and the texture was moist and melt in your mouth sweet goodness.
This is a sweet yet tart salad which is a great dish to serve with chicken or even alone with some
great bread.
You are going to love that all you need is one bowl, a knife, a spoon and wisk to prepare this tasty
little treat.
Oh, and did I mention that there is an added bonus?
It is super healthy and I just be your kiddos are gonna love it too!
During our visit to Colorado we ate several meals out at some terrific restaurants in Durango,
however on our last night we really just wanted to stay in and enjoy the quiet and beauty of the
majestic Mountains.
Sadly enough, this Mother Hubbard's cupboards were bare, except for some fruit, yogurt and nutmeg.
Tada...the Waldorf Salad Mountain Style was born!
Ingredients :
3/4 cup coconut low fat yogurt (or vanilla)
1/4 tsp lemon juice
3 golden delicious apples cored and cut into cubes
1 banana sliced
2 large peaches pitted and cubed
1 tsp nutmeg
Romaine lettuce leaves (if you have them)
Preparation:
Whisk yogurt, lemon juice and nutmeg in large bowl. Add apples, banana and peaches.
Toss gently,
Arrange lettuce on plate spoon salad over.
Enjoy!

ReplyDeleteWaldorf Salad is one of my favorites, and we have it every Thanksgiving. It is one of our side dishes, but never tried peaches, only oranges and bananas. This looks so yummy, Jemma.

Don't impromptu dishes like this very appetizing, mountain style Waldorf salad you whipped up always taste so much better?! This coconut yogurt and banana infused salad sounds and looks very richly refreshing! Thanks for sharing your creative and culinary strokes of spontaneity!
