Heavenly Key Lime Pie

July 21, 2017
What type of baker are you?
Do you get in your kitchen and tear it up with a mess here and there, maybe even get a little flour in your hair. Or are you a neat baker that picks up those measuring spoons as you go along?
Do you wear an Apron or do you dare to bake without one?
For me, I wear an apron as I am a mixture of mess and neat. I tidy up as I go along, but I really get into the therapeutic joy of creating an edible concoction.
So when I made this incredible edible heavenly Key Lime pie I knew it was a recipe that I just had to share with you all.
One of the best and yummiest things about this recipe is the crust.
This is a mixture of butter, vanilla wafers and macadamia nuts...I am totally blown away by the combination of flavors and will never make an ordinary graham cracker crust again!
Yes this is the best pie crust that I have ever had. (except for Mom's)

I found this fabulous Summertime Key Lime recipe in Southern Lady Magazine.
The cool thing is this, they have an online Recipe Box!
A few weeks ago I shared a Lemon Curd-Filled Cake recipe from this lovely magazine too, as you can see I am into lemon and limes.

That reminds me that I need to be getting a Lemon Tree ASAP, maybe I will go to Covington's Nursery in Rowlette and see what they have in that department.
We get some amazing light in our kitchen and I'd sure like to have a Lemon Tree in my kitchen come Winter time!
Do you have a Lemon Tree?? If so I'd love to hear how it is growing for you.

What I like about this recipe is this:

As you can see the texture of this Key Lime Pie is spot on with a crust that cuts easily and yet remains firm.
The Key Lime flavor is not overpowering and the pie is actually best on the second day.
Recipe is easy to follow.
Pie crust is one of the best that I ever tasted.
This would be a lovely dessert to serve for any occasion and it is quite simple.

Thank you for joining me and have a fantastic weekend.
Happy crafting and baking to you!

  1. Good Morning - I love Key Lime - No lemon tree here and that crust does sound amazing. I don't like graham cracker crust because it's too sweet so perhaps this is a good alternative. Would be great with cheese cake. So now that I have a much smaller lifestyle I rarely bake. Back in the day I was a tidy baker with no apron;I clean up as I go. Hope you have a great Friday and if you ever get the opportunity to try Key Lime Truffles from Sees candy - do it..

However, I know that your new journey is taking your creative passions elsewhere.

  3. Would you believe I don't own an apron? My dirty little secret is when I'm baking, or just hanging out at home to be frank, I'm dressed like a bum...stained, oversized t-shirts are the norm, something most southern ladies wouldn't be caught dead in. Don't tell anybody ;).

I like the sound of that crust Jemma! Macadamia nuts would make an awesome addition, cutting the sweetness a bit of the crackers. You MUST get a lemon tree, and now you have me wondering if they will grow in NC?! I'm going to find out IF we ever sell the cabin and get there!

    1. Good Morning Doreen!

Well girlfriend, I need to send you an apron if you'd like one! Seems my girls gift them to me quite frequently, I have spares so to speak.
My lips are sealed I will not tell a soul that you don't own one...lol!

You are exactly right that is what the crust does, cuts that incredible sweetness of the pie.

Oh I am wondering if you could grow your Lemon Tree outside in N.C. I just bet you could and wouldn't that be beautiful.
Yes, we both must look into this study of Lemon Trees.

    1. Good Morning Cecilia!

Happy Friday to you my sweet friend.
Well you won't be dissapointed with this pie and it sets up so nicely and oh that crust.
If you do make it, let it set overnight before serving the next day. It mellows out the flavors!

    1. Yes Liz, it is a fabulous recipe. The filling sets up so well and the crust is the best ever and could be used in all types of recipes. I just don't think that I will ever go back to the plain graham cracker ever again!
Working on finding the print button for those who would like to print the recipe.

  6. This looks and soinds so good. I love it that you are SL's tried and true tester for us!
I'm a bit of a neat freak, but many times don't sport an apron until after I've gotten something on my clothes.😞 I love lemons, keep them as a staple, and one winter experimented with germinating plants from my own seeds. It worked! However, my enthusiasm dropped after a yr so I tossed them. I would love to have a lemon tree in my sunroom and think it would do well, just not sure if I want to baby houseplants. Been there, done that.
    Have a great weekend.

  8. Hello Jemma, oh key lime pie is my favorite! Thanks for this recipe. I will have to make it sometime.

I have a question for you. I love your recipe card and how did you make it? Also since we can no longer use photo bucket what did you do to get the photo url? I am just looking for ways to do my recipes on my blog so they look better.

Thanks and have a nice weekend.

    1. I use PicMonkey collage and insert my own photo in one of the squares. Then I size it down.
I only use my own photos on my blog.
From there I send it directly to editor.
In editor all of the collage lines disappear and you can add your text.
I add a simple black frame so the recipe will be distinguished from the blog page!

If you have any other questions let me know and I'll be happy to help!

  9. Yes I love to wear an apron because it helps get me in the zone. :) Also saves my clothes from stains.

That pie looks amazing. I would love to try it just for the crust!

  10. Oh my, I can just taste it! I love key lime pies! Will have to try vanilla wafers next time. I made a banana pudding this week with them. I'm laughing as I write this because when RH and I went to the grocery store to buy the ingredients I wanted to get the Lorna Doone shortbread cookies to use instead of the vanilla wafers while he insisted on me sticking to the same recipe as always. Let me just say that I forgot all about the Bible telling me to use a soft answer. Thank goodness no one was in our aisle at the time. But really, men, sometimes we just shouldn't allow them to go shopping with us.

You style your finished product so beautifully, Jemma. And I'm sure you would never forget to give a soft answer!

  11. Heavenly indeed. I'm a half-and-half baker. I have a small pile of vintage aprons inherited from my grandmother. These I never ever use. But I do have a demin apron with two large pockets that seems to only get nicer and softer in time and I always wear that.

  12. That sounds like a great recipe...a bit different from mine. The old Key Lime pie from the FL Keys only use the yolks so that is how I have always made mine. I bet the addition of 2 eggs gives it a bit more 'oomph'. I will have to try it AND the crust, too.
Have a great weekend- xo Diana

  13. As soon as I enter the kitchen I reach for my favourite apron, it's turquoise with lots of pink roses in the pattern!

Key Lime Pie, sure looks delicious ...

    Enjoy your weekend

  14. Probably my favorite pie! Thanks for sharing your recipe -- it looks delish!

And I'm a neat, clean it up as you go along baker. Which isn't to say that the beater may spatter batter on the cupboards or a dusty mess with adding the flour! But my counter space is limited and it gets mise en place, then put away as I work -- or else I'd have no room to finish!
