Fresh Granny Smith Apple Cake

Oh the joy of Fall and a recipe for Fresh Apple Cake!
The weather is cooling, the nights are becoming longer, fragrant candles are burning and our Harvest Tree is glowing!
These are all just a few of my favorite Fall happenings.
I am sure you have a list as well.
I just want to hunker down by the glowing fire with my favorite cozy blanket and a little treat.

The hubby and I have been striving to trim our waste lines and yet not giving up totally on some fresh Fall treats.
(This recipe does have fresh apples in it, so I can fudge a little on the total truth!😉)
I think I may have found the perfect cake to satisfy our sweet tooth without going over the top.
I think that this just might be one of the desserts that I make for our 
Thanksgiving meal.

Fresh Apple Cake~

Ingredients-
Honey Glaze:

1 1/4 cup sifted powdered sugar
2 tablespoons honey
2 tablespoons heavy whipping cream
1 teaspoon vanilla

Fresh Apple Cake
Ingredients-

3 cups cubed Granny Smith apples ( about 2 medium size)
1 1/4 cups chopped pecans toasted
1 tablespoon vanilla
2 1/4 teaspoons ground cinnamon
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 1/4 cups vegetable oil
3 eggs

Directions~
Honey Glaze-

In a small bowl add all ingredients and whisk together.  Set aside.

Directions~
Toasted Pecans-

Preheat oven to 350 degrees, lightly spritz cookie sheet with cooking spray, spread chopped pecans evenly over cookie sheet and bake 5-7 minutes.


Directions~ Preheat oven to 325 degrees Bake 1 hour 30 minutes or until a tester inserted into middle of cake comes out clean.
Fresh Apple Cake-

Spray Bundt pan with bakers joy cooking spray.


In medium bowl combine apples, pecans, vanilla and cinnamon. Set aside.

In a separate mixing bowl combine sugar, oil and eggs using an electric mixer, mix all of these ingredients together until well blended.  Add sifted flour, baking soda and salt beat until all ingredients are mixed. Fold in apple mixture and pour into prepared pan.

Remove from oven when done and cool in pan for about an hour, on wire cooling rack.  

Glaze cake and top with Pecan Halves.

Love this apple cake!

So many occasions to serve this cake tasty and pretty cake.
It would also be perfect to serve for  a brunch or an afternoon coffee or tea. 

Just be sure to wrap the cake well and refrigerate it for up to four days.
